Dairy Free Living

I am going to get healthier.  I am going on a dairy free diet. I’m not going to go on any special or specific kind of diet.  Mostly, I’m going to try to eat better and start getting some exercise.  The hubby is going into this with me, at least when he’s at home and wants to eat.  He’ll have to figure it all out himself during his lunches at work.

Tonight we had our first dairy free diet meal.  I thought it was really good and the hubby said he liked it which meant he didn’t hate it.  I made oven fried almond encrusted chicken breast and roasted potatoes, onions and zucchini.  Mmmmm!

We are also worried because we realized that our garage roof is leaking. Horribly leaking. Leaking all over many of the boxes we have packed up in there. So I’ve been bringing boxes in and unpacking them today.  Its fun to unpack, almost like Christmas, as you get to see stuff you haven’t seen in awhile.  I like cleaning everything and finding a place to put it.  Some of the stuff doesn’t have a place yet so it looks like we may end up with some boxes sitting around which worries me because sometimes those boxes will end up sitting there for a year if I don’t get them unpacked quickly. 

So, back to the dairy free diet.  Do you have any dairy free diet recipe ideas? What are your favorite diet recipes in general, dairy free or not?
