How To Eat Good Food When You Can’t Cook.
They say,” what don’t break you only makes you stronger.” Well, I cannot wait until I get electric in my new home. I will be so strong! Having said that I have learned a few tricks along the way about how to eat good food when you can’t cook.
Rotissouri Chicken has been our savour during this mess. It is a comfort food, it’s hot from the deli, and it’s versatile. Below you will find three ways to use the same chicken that you purchase from the deli along with the side dishes.
1. Baked Chicken, Brocolli Salad (also from the deli), and a veggie tray.
These foods can be bought in most deli supermarkets throughout the nation. The brocolli salad includes raisins, and sunflower seeds. The raisins add a nice sweet taste and the sunflower seeds give it a nutty crunch. Veggie trays come in small containers to feed 1-4 people and are readily available year round.
2. After you have your hot meal store the remaining chicken in an airtight container either in a refrigerator or a cooler with lots of ice. When your next meal rolls around chop up some of the cold chicken, celery from your veggie tray, and a little left over brocolli salad and roll it up in a flour tortilla. It makes a wonderful cold wrap for lunch.
3. If you still have a little Chicken left over grab you a 99 cent dinner salad from a fast food joint and add all the remaining veggies and chicken and enjoy a wonderful Chicken Salad.
When times are strained you don’t always have to have sandwiches and fast food. Sometimes a little comfort food can make all the stresses of life seem a little more tolerable.
