Day Two of Not Eating Out
Last night we had a wonderful dinner of steak, creamed corn and toasted garlic bread. Mmmmm, too good! We hadn’t had garlic bread in forever but we had bought fresh french bread for sandwiches for lunch and I made it into garlic bread. Not really fitting in with my low gluten plan but delicious nonetheless! I chopped up, very small, a bunch of carrots, onions, garlic, and mushrooms and cooked them in the same pan I cooked the steak then served them over the steak.
The hubby had asked for the creamed corn and I have to say creamed corn is great when you have a dairy allergy. It works well in casseroles and some soups to give a creaminess to your dairy free recipes that is hard to get otherwise! I have a great Tex Mex Chowder dairy free recipe somewhere using creamed corn that I’ll dig up to share with you all. Not to mention it sounds good! (Can you tell I haven’t had lunch yet?)
Today we are going to have sandwiches for lunch unless I can come up with something else that the hubby and I would like. The hubby is home until Wednesday because we’re on a bit of a staycation! Which is also why I’m not coming up with the best posts, I’m in no work mode!
