Dairy Free Recipe - Taco Soup

I love this soup.  I often have tacos just so that the leftovers can be made into this fabulous dairy free recipe!  Yesterday we made a dairy free recipe for taco soup and we had canned kidney beans, corn and rotel tomatoes, and taco meat left over.  Now you can make this entire recipe from the start if your family eats up all the taco fixin’s.  I just like that I can make taco salad then immediately make up a dairy free recipe of taco soup that I can save for lunch the next day or freeze.  This soup freezes great so you can make individual servings for lunches and dinners!

Taco Soup 

Here is the actual dairy free recipe for taco soup!

1 pound ground turkey

1 package taco seasoning

1 medium onion chopped

1/2 green pepper chopped

1 can black beans

1 can kidney beans

1 can whole kernal corn

1 small can tomato sauce

1 can rotel tomatoes

2 tbsp chopped garlic (I use the garlic in the jar)

If you are using left overs then just throw the taco meat already made in the pot, if not then brown the meat and throw it and the package of taco seasoning in a pot.  Then throw everything else in the pot and heat until warm!  See how easy that is?  Now black beans are in this dairy free recipe but if I’m using leftovers from taco night or just don’t have any then I don’t worry about adding them in.  Sometimes I also add rice (the picture shows taco soup with rice) to bulk it up if I want it to last longer.  This is a very versatile recipe!

To serve this dairy free recipe I often add a dollup of dairy free sour cream.  Sometimes we eat it with crackers and sometimes we eat it with rolled up tortilla shells that we dip into the soup! mmmmm!  No matter what it is always delicious!
